This is Kathy's favorite squash. When we had a garden several years ago I planted 8 or 10 hills of butternut squash. The prolific growth of the vines became the subject of jokes around here. I had to go out almost daily and turn the ends back toward the garden before they took over the back yard. I fertilized with MiracleGro when the plants were young and they took off like Kudzu. When the squash was ripe and ready for picking that fall I picked two and a half heaping wheel barrows full. Kathy had blisters on her hands from peeling them and prepping them for the freezer. She DID get a helpful hint for peeling them from a friend. She now microwaves the squash for 2 or 3 minutes and the peel softens and becomes easy to remove with a paring knife. I did the same thing with zucchini one year. I didn't plant as much, but the yield was more than we could keep up with. We ended up with zucchini that weighed 7 or 8 pounds and had a skin so thick that the only thing Kathy could use them for was to grind them in the food processor and freeze the resulting pulp for zucchini bread.
I think that butternut and acorn squash are about the sweetest and tastiest squash a person can buy. My family always bought a big Hubbard squash for thanksgiving. My mom would cut it in half, load it with butter and bake it until it was cooked and could be scooped out of the shell.
Well Alan, you have now made me hungry for butternut squash. I am going out for strawberries again later and I shall have to pick up a squash or two and possibly a pot roast for Sunday. ( I buy 4 quarts of berries every couple of days while they are on the local stand and Kathy freezes them. By only buying 4 quarts at a time, she doesn't have to stand bent over the sink for too long with her bad back.)
Do you have any special recipes for butternut squash? I have had it stuffed with bulk Italian sausage and bread crumbs but I don't know the exact recipe for the stuffing.

I watched a couple of cooking programs that had a few butternut squash idea's. I had the soup years ago and really liked it. When I was in Seminary on one Sunday the cook made acorn squash stuffed with Italian sausage. Did not go over very well and everyone ate the salad then had cereal for supper that night. Later that evening 20 of us went out for pizza. I remember the pizza place was delighted when we all walked in at once.

Hahaha! I can picture all the brothers sitting around the table with bowls of cheerios for Sunday supper, while a scowling cook scrapes sausage stuffed squash into the trash can.
I liked the stuffed squash but it is not something that everyone would be overjoyed to find on the menu. Our Sunday dinner will simply feature the squash cut into cubes, cooked, and finally mashed with butter. If the squash is not real flavorful Kathy has occasionally whipped in a small amount of brown sugar. Just enough to bring a hint of sweetness, but not enough to make the dish dessert like.
