Kit suggested that I move this here from another thread that started out about cooking with wine. The only alcoholic beverage I purchase any more is an occasional bottle of beer in which to cook bratwurst. There is no substitute for brats cooked in beer. I slice a sweet onion or two into the beer in a foil pan and cook the brats by simmering them in the beer until they are cooked. I then brown them a bit on the open grill, place them on a bun that has been lightly toasted on the grill, and add a generous portion of the onions simmered in the beer on top as a condiment or garnish. A squirt of a good German mustard and you are ready to enjoy a real treat.
I use a light ale such as Saranac. I once did it with a bottle of Guiness Stout. I found that stout is bit bitter and made the onions and brats a little bitter. You can use a regular lager or pilsner. I have had it done in both and it was fine. I would not suggest a light beer as it might lack the umph to flavor the meat. I have not tried it with light beer.

I have some Bud light in my fridge which I bought for a guest who doesn't like real beer. Perhaps it would work as a marinade.
