I tried a suggestion that I had read on Pinterest recently and prepared hash browns with onions on the waffle iron. I used frozen hash brown potatoes from a bag, and frozen diced onions from a bag, allowing both to thaw overnight in the refrigerator. I simply piled some (I used a one cup measure) of the mixture on the waffle iron, closed the lid, and cooked them until they were golden and crispy. They come out crispy and golden on the outside, and tender and moist in the middle. Plop a poached egg or egg cooked over easy on top of the hash browns, park a couple of breakfast sausages next to them and you have a breakfast to die for.
