Simple Chicken Bone Broth
Ingredients
1 whole chicken, cut up or left whole( 3-4lbs ) Chicken feet ( can find in oriental markets, adds collagen to broth Filtered water 4 quarts Carrots, cut any way you like Celery, cut any way you like 3 cloves garlic left whole A large onion, cut any way you like leave skin on 2 Tablespoons vinegar, to draw out minerals in bones Tablespoon whole peppercorns Good sea salt to taste
Method: Put chicken and feet and water in large stock pot. As it boils remove any scum that rises to the top
After you remove thee scum add the vegetable and peppercorns and vinegar. Cook for several hours or at least until the chicken is falling off the bone. After the chicken is done, if you are using it as stock, strain the vegetables and meat out. Do not add salt
If using as a bone broth, taste and add salt. Serve with meat and vegetables
