I found a recipe online the other day for cooking hashbrowns in the waffle iron.
2-3 medium sized russet potatoes, shredded 1/2 of a medium onion, finely chopped 1/4 cup of flour 1 egg
Mix all those ingredients together well. Preheat the waffle iron and either spray it with non-stick cooking spray or brush it with vegetable oil. Take a handful of the shredded mixture and spread it evenly over the grid on the waffle iron. Cook for about 5 minutes or until golden brown or to the desired doneness.
This is the easiest way to get a neat portion of hashbrowns, done crispy on the outside and tender and soft on the inside. The non stick surface of the waffle iron simply needs to be wiped clean with a wet cloth when finished. I made about 6 of these "hashbrown waffles" and froze some for later use. The dividers in the waffle iron allowed me to break them into individual 3 inch squares. Two of them will make the perfect portion for a breakfast plate.
