Here's an easy recipe for sweet munchies to have after your Thanksgiving dinner while watching the game, or any other time you like. I make them occasionally when my sweet tooth needs a little exercise.
Oatmeal Balls
2/3 cup milk pinch of salt 1-1/4 cups sugar 1/4 cup unsweetened cocoa powder 1 tsp butter 1/3 cup peanut butter* 1/3 cup chopped nuts* 1 tsp vanilla extract 3 cups Quick Oats (not regular)
Bring milk to simmer in saucepan. Add salt, sugar, cocoa powder and butter. Cook 1-2 minutes, stirring. Turn off heat.
Add remaining ingredients and stir well (this should be quite dry but if too stiff, add a little milk). Cool slightly.
By rounded tablespoons, with damp hands, roll into balls. Put on wax paper and let dry several hours or overnight until no longer sticky. Store in a sealed container.
* If allergic to nuts, use Tahini (sesame paste) instead of peanut butter and omit the nuts.
Quick, easy, one pan, and delicious.

Sounds very good Kit. Also very easy and quick to make with little mess to clean up afterwards. Kathy makes something similar in ease of preparation as part of her Christmas cookie regimen. She also makes a candy with rice crispies, corn syrup and peanut butter rolled into balls and dipped in melted milk chocolate. Being a Nestle's Crunch bar fan for many years, this is one candy that I do like. I am not a sweets person. I would rather have pretzels or chips. I saved your recipe for her and she is going to try is someday soon. She LOVES chocolate.
Wow. That Christmas cookie season is coming up quickly. Probably no cookies this year from Kathy. She is still not able to get around well and could never stand in the kitchen long enough to make her usual amount of goodies. The neuropathy in her leg is killing her most of the time. Gee, if we were still in Utica, I could just swing by the Star Bakery and buy their little Italian cookies by the pound. They always have a great variety of cookies with which to build a gift tray.
