Raw Broccoli and Cauliflower Salad Serves 6 2 cups thinly sliced broccoli florets 2 cups thinly sliced cauliflower florets 1 carrot thinly sliced 1 small red onion, thinly sliced into rings 1/2 cup toasted pine nuts 1/2 cup dried cranberries Dressing 2/3 cup Filippo Berio extra virgin olive oil 1/4 cup cider, red wine, or rice vinegar 1 teaspoon dry mustard 1 teaspoon sugar 1/2 teaspoon salt 2 tablepoons fresh minced tarragon leaves Combine broccoli, cauliflower, onion and carrot in a salad bowl. Set aside. In a small bowl whisk the salad dressing together. Pour over the salad and toss well. Sprinkle the nuts and cranberries over the top.
