Sicilian Ricotta PieNew website for some great recipes (ouritaliantable.com) With Easter coming up upon us, I liked this "cassata" recipe. The other recipes on the blog also look tempting. this year when I make mine instead of grating a chocolate bar I am going to try the mini choc chips. Sounds far easier than the grating of choc and faster.

This looks delicious, but I'd probably make mine with a store-bought crust. I'm a pretty good cook, but not the greatest when it comes to pastry.
You're right, Chris, the other recipes look delicious as well, so naturally, being Italian through adoption (?), I've bookmarked this website.

Thanks chris. My Mom would make the best ricotta pie every Easter as well as the big doll cookies with the whole egg baked in. Caruso Pastry shop has their sign in the window about them specializing in it. I have to check on that cause I hate to have to order a whole one.

Kit i have one that I use and it is easy cause you pat the pastry in place. It comes out more of a cookie pastry as opposed to the typical pie pastry. I'll post it later (not on device with my files at the moment) fills a 10" spring form pan.

casatta021.pdf (42.24 KB) okay as promised I scanned the recipe for the crust (whole recipe is included) This is my recipe for the casatta I make every year. I think it originally was in a St Anthony cookbook. Kit you should have no problem with this one.

That is also the casatta that my mother made and grandmother and I also made that years ago, I just may give this one a try again. Love casatta with the rum and cherries in it.

Alan because the page was in a book I had to scan it upside down to get it into the printer but if you print it it should not be a problem. To read it here on the PC then just open and click on view and select rotate till it is rightside up. (Or you can stand on your head)

Chris... as I mentioned, I'm not much of a baker so I bought 2 unbaked pie crusts at the grocery store. Apparently they were meant for a two-crust pie (what do I know?) so I made 2 pies that were each a bit on the thin side using Michelle's recipe that you originally posted. Despite them being not as thick as the one pictured, they're delicious and one of my daughters is stopping over this afternoon and picking one up for her and her 2 kids for dessert tonight. There was some filling left over so I filled 2 ramekins with it and baked them as well. They, also, are delicious.
