Anybody have a really good recipe for cooking greens, or greens and beans? I love the italian style greens and beans or just plain italian style greens, with some cherry peppers either part of the recipe, or crushed red pepper, and with parmesan freshly grated over the top. Hmmmm. Dab it up with some crusty italian bread, and your in heaven!
I really am not into the collards and "creasy greens" here in the south. I guess creasy greens are some sort of cress like water cress.
Hurry, I have started drooling, just thinking about greens and beans! Pardon me while I wipe my chin on my sleeve!!

Those recipes look good but almost all use crushed red pepper flakes. Check out the greens at the Plaza where they use Italian long hots. Now THAT's Italian.

We had an italian fellow in the base fire department years ago that made them with italian long hots. Whew, they were hot! I also had them at one of the little mom and pop restaurants in East Utica at one time or another with cherry peppers, but I can't remember if it was Pescatores or Venturas or one of the others that were around back in the day. It was a little more mild but still had a nice bite.
I grew italian long hots this past summer in the garden. There was a drought here in tennessee, but what peppers I got were hotter than hell. They make a real good sandwich on either Keilbasa or italian sausage. I even put them on the plain old hot dog. Oh well, I am a hot pepper nut anyway. I have my better half can jalepenos from the garden and I eat 3 or 4 quarts a winter all by myself. Salads, omlettes, on sandwiches, and out of the jar with crackers. Haha.
Keeps the carbon build up out of the old tailpipe!

Habenero's if you're into hot peppers.........
I eat hot peppers on damn near everything too clip.
Concerned thanks for the recipes. Greens are a little too advanced for my culinary abilities but I'll have my wife take a shot at em.

Oh yeah! Habenaros. Hmmm. They are a little too hot for my old body. I eat the habenaro sauce on mexican food when we go out, but I cannot imagine eating a plain habenaro pepper.
I finally got around to finding some escarole yesterday and put together for supper last night. I used pancetta from a deli here, that is run by a guy from Watervaliet NY, near Albany. He has pancetta, bulk parmesan and romano, decent sausage, cappecola, and other stuff you can't normally buy here. I used good imported olive oil, and a combo of cherry peppers and crushed red pepper, and it came out outstanding. I also used 6 cloves of garlic instead of 4, and loved it. Mouthwash for lovers, haha.

Habenaros are about as hot as food can get and still be classified as food. Anything hotter and you're talking about a chemical burn.
Take, for example, Dave's Insanity sauce. That is not food.

I used to eat a lot more hot stuff when I was younger. Does anyone remember when they had a "hot sauce shop" in the riverside mall for a short time It didn't last long, but they had a whole store of nothing but hot sauces from all over the world. I used to go in there and try lots of different ones. There was one called Suzies from Antiqua that would leave your tongue blistered. I put one drop on a corn chip and had to go immediately to the food court and buy an icecream cone to get the burn out of my mouth. haha

YES! I DO remember that! I bought some hot sauce there and they had me sign a waiver AND they checked my ID to make sure I was at least 18! LOL!
