Lemon chicken
From Juju Good News
2 tablespoons lemon zest
1/3 cup freshly squeezed lemon juice
2 cloves garlic, crushed
2 teaspoons fresh thyme leaves
1 teaspoon fresh rosemary leaves, finely minced
1 teaspoon salt
1 teaspoon black pepper
2-4 lbs. of bone-in, skin-on chicken thighs or drumsticks (I used chicken breasts)
2-3 tablespoons melted butter
Thinly sliced lemons, for garnished
1. Combine the lemon zest, lemon juice, garlic, thyme, rosemary, salt and pepper in a large zipper-lock plastic bag. Seal the bag and shake well to blend. Place the chicken pieces in the bag with the marinade, pressing out excess air and sealing once more. Refrigerate and let marinate for 2 hours.
2. Preheat the oven to 425 degree F. Remove the chicken pieces from the marinade and transfer to a baking dish, skin-side up, reserving the leftover marinade. Brush the top of each piece of chicken with melted butter.
3. Bake for 50-55 minutes, until the skins are crispy and well-browned. Halfway through baking, pour the remaining marinade over the chicken pieces in the baking dish. Once fully baked, cover loosely with foil and let rest 10 minutes before serving. Transfer to a serving platter, garnish with lemon slices and serve.
I love this with a dry white wine. ;D

That sounds delicious Alan. I love chicken thighs. I am not crazy about the breasts unless I can marinate them long enough to flavor them up and keep them moist. Breast meat tends to be dry and flavorless in my estimation. They DO make a good pallet for any additional flavors and a good base for a wide variety of dishes from chicken parmesan to chicken alfredo over linguini or fettucini.
When I do buy breasts, I buy them with the skin on and bone in so that at least they have some flavor and the skin keeps in a little moisture.
We use thighs when Kathy makes chicken and dumplings because they create a hardier broth than breasts.
If you like chicken McNuggets Alan, you would love the chicken tenders from Walmart. It is one of the only things I shop for at Walmart. They are great with honey mustard dipping sauce and are fairly inexpensive and at least you know what part of the chicken is actually involved, haha!
I will be trying the lemon chicken recipe soon. Sounds great!

I don't use breasts for this dish. I did once and they were to dry. I use legs of thighs. It is funny but lately when I made these I forgot the thyme and rosemary! I made them like that last Sunday and wondered why the taste was different! Old age and dementia setting in.
Chicken tenders from Walmart are very good and I love them with honey mustard sarce and that Chinese sause-honain? spelling is wrong and I am too lasy to get up and walk to the frig to look--all of five steps. LOL

I think you are referring to hoisin sauce Alan. Great stuff. It's a popular condiment in this house. I buy either the Kikkoman or Panda brands. I like it hot so I add a couple teaspoons of Sriracha Chinese hot chili sauce for a little extra zing. Sriracha hot sauce can be found in the Chinese food section at most grocery stores. It has a rooster on the bottle.
I make a concoction consisting of Thai noodles, fish sauce, soy sauce, and chopped fresh jalapenos (not pickled). After hydrating the noodles in hot water, I stir fry them with strips of chicken, the jalepeno, the sauces, and then garnish the dish with diced scallions when I serve it. Although it already has the other sauces added while cooking, I also add Hoisin sauce to the hot noodles in my bowl and stir it in. It adds just a touch of sweetness and flavor. Kathy watches the sweat bead on my forehead, and simply shakes her head, hahaha.
Do they sell the O'Charlie's brand honey mustard salad dressing up there? We have O'Charlie's restaurants around here and there dressing is sold in stores. It is great stuff.
While on the subject of chicken, I like to bake thighs or drumsticks and baste them with the O'Charlie's honey mustard dressing as they cook. Great done that way on the grill in summer also.
