Bought some eggplant the other day at a vegetable stand. Just made eggplant parm.....ummm yum ymmmy. Don't cook too often just for myself but when I do watch out. ;D

I make a mean Eggplant Parm. Lot of work but the end result is heaven.

Venice Pizza in Yorkville used to make a mean Eggplant parm sub sandwich. That thing was a meal for two and was delicious. We used to get one large sub and an antipasto and made a supper out of it.
