Cowboy Butter Ingredients 1/2 cup butter, softened 1/2 shallot, minced 1 tablespoon lemon juice 1 tablespoon Dijon mustard 1 tablespoon minced fresh parsley 1 tablespoon prepared horseradish 2 teaspoons minced chives 1 garlic clove, minced 1 teaspoon minced fresh thyme 1/4 teaspoon kosher salt 1/4 teaspoon coarsely ground pepper 1/8 teaspoon paprika 1/8 teaspoon cayenne pepper Directions 1. In a small bowl, whisk all ingredients until blended. Transfer to a sheet of plastic wrap; roll into a log. Refrigerate until chilled. Unwrap and slice or place on a butter dish. 2. I like horseradish but I think a tbsp of it would overpower everything else. Maybe not.
My grandfather would pick it wild from a field next to his house & grind it himself using a chrese grater. Lol. Outside, because the stuff would knock you over when grinding it. Not like the watered down crap they sell in stores today, that's for sure.

My brother does the same thing with the horseradish he has growing in his backyard. He had a house in St. Johnsville, NY ( a beautiful 4 bedroom house in Country area) and when he bought his new house in Ilion( in a country setting) he brought some of the plants with him along with the rhubarb he grows. I wish he could go hunting again cause I usually got some deer meat to make my venison stew but his shoulder is bad.

It's easy to grow but the plants are huge. Some people grow it in 5 gallon buckets. I was going to plant some a couple years ago but didn't. The wife won't eat it so it would go to waste unless I could give some away.

When I worked at the base fire department we had a secret place on the far side of the runway where it grew wild. If you stick the tops back in the ground when you dig it up it will re-root and continue to grow every year. We used to pick enough of it to fill a trash bag. Being a fire department we had breathing apparatus available so the person doing the grinding would put on a Scott Air Pack and everyone would stay out of the kitchen until the grinding was complete. Unfortunately the security police discovered our secret spot and didn't put the tops back when they dug the roots, hence it didn't come back.
