We don't normally make soup when it is real warm out but last night Kathy cooked a 3 1/2 lb chuck roast and with just two of us we probably ate less than a pound of it. We aren't venturing out anywhere today so I decided to make a nice soup or stew with the remaining meat. Cut the roast into cubes, cubed a large baking potato, 1 bag of frozen mixed veggies, one bag of peas, a can of whole kernel corn, 2 small onions diced, 4 stalks of celery diced, 3 quarts of boxed beef broth, 2 bay leaves, 2 cloves of finely chopped fresh garlic,1 tsp of Lawry's seasoned salt, 1/2 tsp of freshly ground black pepper.
It doesn't make any difference if it is hot outside. We both love a hot bowl of home made soup and a nice green salad for a light summer supper. We will get good mileage out of the chuck roast and will probably have two batches left over to put in freezer containers and put in the big freezer in the garage.

Sounds good. Just lower the thermostat on air conditioner and bang it is just like a cool day in early spring....

I was out working across the road clearing some brush along the creek and was hot and sweaty when I came in. It is 77 right now but it was hotter when the sun was high earlier. I hopped in the rain locker and washed the sweat and stink off and then turned the AC thermostat down to 68. The soup was delish as was the salad and the cherry pie. A little screen time here and then into my recliner to stare aimlessly at the tube until bed time.

Cherry pie was delicious, but a true patriotic dessert is the sundaes they were serving at the restaurant where we ate dinner last night with my sister. They layered vanilla ice cream, strawberries, more vanilla ice cream, blue berry pie filling, and topped it with whipped cream. I opted for the dull and boring looking bread pudding with hard sauce, and my sister and Kathy both ordered chocolate lava cake. Shamelessly un-patriotic, but delightfully delicious.

Yummy! I think it was at Hannaford in New Hartford. They were selling strawberries 2 packages for $4.00 and the strawberries were the largest ones I have ever seen and nice and red. Sure beat the strawberries that Walmart was sell for $1.89 which were mostly still green small and looked undernourished. Oh well maybe Walmart got a deal and grabbed it.

I agree. It was a bit lacking in reverence to have big stand-up placards on all the tables telling a person to "celebrate the holiday with a patriotic dessert" I said something to the server and all she had to say was she didn't make the menu and all she was there to do was push the sundae.
It just upsets me that people are focused on a three day weekend and all the fun they can have "celebrating" memorial day. I hope they choked on their hot dog or got food poisoning from the macaroni salad that they left out in the sun while they were drinking beer and playing cornhole.

I had Salmon with a potato salad made with purple small potatoes and a dill pickle. I do wish the Buses would run on all these holidays.

I bought strawberries from BJ's yesterday for $5.99 equal to a couple quarts & they weren't bad. So we had strawberry shortcake with homemade biscuits. Not because of any holiday patriotic nonsense, it's just one of my favorites.

I don't understand the SC Justice. I also see no sense in doing whatever he is doing for whatever new reasoning to justify his actions. Even then I still wonder why do this.

I bought some sliced watermelon at Hannaford today. Four thick slices wrapped in plastic on a styrofoam serving platter for $2.98. I know it is cheaper to buy a whole watermelon but I cannot carry the think. I like the rind which I cut up and serve on salad or just eat it along with the meat of the watermelon. I slice off the green skin before eating and may try pickling some rind if I find an easy recipe.
