Today is National Perogi Day. When I read that this morning I immediately informed Kathy, just dropping the most subtle of hints. The Polish Princess is in the kitchen as we speak, making perogi for supper tonight. Some with Sauerkraut, chopped mushrooms and onion, and some with potato and cheddar cheese. I love the sauerkraut perogi with the mushrooms and onion. She finely chops the mushrooms and onion and tosses them in a frying pan with a little butter. She puts the sauerkraut in a collander and rinses it several times, drains it well, chops it up finely, adds it to the mushroom and onion mix, and cooks it for 5 minutes or so. She will make a dozen or so of each variety and we will freeze the left overs. Add a ring of the Hapanowicz kielbasa that we brought home from NY to the plate and I will be waddling away from the table full and contented. Yum!

I ate my weight in perogi and there was perogi left over to freeze. There is also enough Keilbasa left for a sandwich for my lunch today. I think Perogi Day should be monthly event, but Kathy might disagree seeing as how she is the one that has to undertake the tedious task of making the perogi.

To each his own, Clipper, but I like to fill mine with chopped and fried onion, peppers, sausage, a sprinkle of grated Romano cheese and a dollop of pizza sauce... boiled and fried... and call them Italian. I guess that would be like a mini-calzone.

I guess that would be like a mini-calzone. Either a mini calzone or a large and overstuffed ravioli. Sounds delicious no matter what you might call it. Heck, why not? Those fillings would taste good no matter what you wrap them with. I wonder how good it would be if you added cooked rice to the mix and made Italian Golobkis with pizza sauce. Even better, roll those ingredients in a flour tortilla and call it an Italian enchilada. You could sprinkle with mozzarella, add the pizza sauce and bake them off.
