Popcorn Salad Ingredients: 4 cups popped popcorn 3 Tbsp olive oil 3 oz vegan bacon 7 oz water chestnuts 1/2 tsp garlic powder 1/4 tsp onion powder 1/4 tsp dill 1 tsp parsley 2 stalks celery, chopped 1/3 cup shredded carrots 1/2 tsp parsley 1 tsp chives 1/4 tsp red pepper flakes 1.5 cups vegan mayo 8 oz vegan cheddar shredded salt, pepper to taste Instructions: In a skillet, heat 1 Tbsp oil and cook the bacon bites for around 3 minutes, then set aside. Now to your popcorn -- and this is important, because we want all the flavors get into that popcorn so the seasoning can stick on it. To do that, add to the popcorn 2 Tbsp oil. Mix with dried dill, parsley, chives, garlic, onion powder, and red pepper flakes. For the salad: in a bowl combine celery, carrots, cheddar, mayo, chestnuts and season with a pinch of salt and pepper. Add popcorn, and mix well. Serve in bowls or plates.
Popcorn salad caught my eye. Something I will have to try some night for supper. Summer time is "salad for supper" time. The page has just about any salad combination you could imagine.
I just joined a FB group that is all about Salad recipes. We both love different salad recipes so this group is going to be fun to follow, and the recipes will be interesting to try. Put a little protein on a salad bar and I could almost live on salad. One of my favorite meals for supper out is a good Cobb salad with all the goodies in it.
