I was in two grocery stores today and at both saw some new spring asparagus the thin one's. I really would like to have some but I risk a gout attack. I have to call my Doctor on MOnday and see if he can prescribe the medication that will not let the gout attack from happening. I forgot the name but CB is/was taking it for prevention. This is what I want to cook Roasted Asparagus with Lemon A simple and full of flavor spring vegetable recipe, this Roasted Asparagus with lemon is a family favorite. Ingredients 1 bunch of asparagus ends trimmed 1 tbsp olive oil 1/2 lemon cut into slices Salt & Pepper for seasoning Instructions Preheat oven to 400 degrees F Place asparagus in a large bowl/dish Add olive oil, salt and pepper and combine well Place asparagus on a foil lined baking sheet Place thinly sliced lemon on top of asparagus Bake in oven for ~10-15 minutes

You learn something new every day. I didn't know asparagus can cause gout, but I'll be trying your recipe. It looks good.

I bought 3 lbs when it first hit the stand up the road. She roasted it in the air fryer, misted with olive oil, dusted with garlic powder, salt and pepper and shredded parmesan. She made a salad the second night with a citrus dressing made with unsweetened orange juice, lemon juice, that grey poupon mustard, olive oil, and a drizzle of local honey. She tossed it with chopped romaine and cherry tomatoes sliced in half. She just got creative and it was okay, but I liked the citrus dressing better the next day on a conventional tossed salad without the asparagus. The asparagus tasted okay but the texture it brought to the salad just didn't trip my trigger. She wants me to buy some to make cream of asparagus soup. She loves it. I guess they had an asparagus bed in their garden growing up and her mom used to make the soup with the less tender stalks. Ya never know what might end up in a salad or a soup around here.
I never knew it could cause gout either BHU. I bowled for a while with a guy that took coumadin for a blood thinner. When we would go out to dinner with him and his wife a local restaurant used to have grilled asparagus on the menu as a side. He wouldn't eat it because it interfered with the blood thinning properties of the blood thinner.
Thank goodness they came out with Eliquis. My cardiologist says that it doesn't react to vitamin K like coumadin. I eat ALOT of greens in salads and cooked greens like broccoli and spinach. My only negative problem with eating asparagus is that it creates enough gas to clear your tailpipe after dinner. Someone told me once that it makes some people's pee smell like sulpher. I don't make a habit out of sniffing my urine so I'm not terribly worried about that.

Asparagus contains purines which can cause gout problems with some people. I had gout flares years ago. I eat fresh asparagus when it is in season and have not experienced problems.
