There is not a lot one can do with leftover liver, and after having calves liver and onions last night for supper we had about a half pound left that we cooked on purpose so I Kathy could make a liver pate' to put on crackers. We had been hankering some liver and onions and I haven't had liver pate' in years so I bought enough to be sure and have left over meat. Kathy made it with a very simple and basic recipe that I found online. It turned out to be quite good.
INGREDIENTS 1/2 lb beef liver 1/3 onion 1 tablespoon butter 1 garlic clove 1 teaspoon salt freshly ground pepper
INSTRUCTIONS Melt butter in a medium size pan. Add chopped onion, garlic and saute for couple minutes until fragrant. Wash and dry liver. Chop it and add to vegetables. Cook for about 5 minutes, until no longer pink.cooking chopped beef liver in the small saute pan Once cooked, transfer all the ingredients to the food processor. Blend until smooth. Add more soft butter or oil if needed. Blend beef liver in a food processor Transfer to a bowl and enjoy with crusty bread or crackers. NOTES Add more butter when blending, or olive oil.
1 teaspoon of garlic salt can be used instead of fresh garlic.
Truffle butter works great in this recipe!

Sounds great. I haven't eaten liver in ages because I was told it can initiate my gout. I love traditional Jewish Chopped Chicken Liver. I use this when I make but worry about gout! cook.me/recipe/jewish-chopped-chicken-liver/ I add some mayo.
