PORK CHOPS WITH VINEGAR PEPPERS AND ONIONS
Ingredients
4 4 Bone-In Pork Chops (medium thickness)
4 Cloves Garlic
Enough Olive Oil to fry chops and peppers and onions
1 Jar Sweet or Hot ( 0r sweet which I use) Vinegar Peppers I use CENTO Sweet Cherry peppers in the glass jar.
1 medium Onion sliced
1 teaspoon rosemary fresh or dried
2 Tablespoons Red wine vinegar and pickling vinegar from the jar of peppers.
1/2 cup Chicken Broth
Directions
First smash the garlic and de-seed and slice the peppers, I like to leave them pretty big so I only slice them in half. Pat the pork chops dry and season with salt and pepper. Sauté garlic in olive oil and remove the garlic when it starts singing (set aside). By now your oil should be nice and hot so go ahead and brown the chops on both sides (about 3-4 minutes per side). Remove the chops. Set aside covered with foil to keep warm
Saute the onions till lightly brown remove. Now saute the peppers I also add one green bell pepper that is sliced. Combine onions with peppers and add rosemary. Return pork chops to pan and add red wine vinegar plus 2 tablespoons of brine from vinegar pepper bottle. Add the Chicken broth. Cover and simmer till Pork Chops are cooked threw. Remove cover and reduce liquid to get a glase that coats the chops.
You can also add baby potatoes that you slice in half. If I do that I add them along with the onions and fry together.
This goes well with sauteed broccoli rabe or brussel sprouts or spinach.
