We have recently been eating torillas instead of bread for wraps instead of sandwiches. It is fun trying the different fillings. We also like breakfast burritos. Tonight Kathy is making "Italian/Mexican" quesadillas. I had bought some jack cheese and was planning on crumbling chorizo on a tortilla with the cheese to make the quesadillas. I found that we had already used the chorizo we had in the freezer so we are going to plan B. Crumbled Italian hot sausage. Instead of salsa we will resort to marinara and will add a few slivers of bell pepper and some mushrooms. Now to decide whether it is a quesadilla or a covered pizza.

Update: The Italian sausage quesadillas were a bust. Kathy drained the sausage as well as she could but it still held onto enough grease to make the bottom tortilla soggy. Tasted quite good but the store-bought sausage was too fatty. Live and learn. Seemed like a good idea at the time.

I use the Joseph's Pita Bread. Made with flax,oat bran and whole wheat and an excellent source of Omega3 ALA. Only 60 calories a pita has 6 grams protein. Is 9 grams total carbs minus the 2 gram dietary fiber for an excellent 7 gram net carbs!!There are 6 pita's per package. I find they are thicker than tortilla's and hold up if you want to make a toasted cheese and ham sandwich or any combination of food items. I think they might work for what you were doing tonight. I occasionally buy pita bread but I haven't done so in quite a while. Aldi's has pretty good pita bread. I have never tried pita for a hot sandwich. I like them for a good stuffed cold sandwich though. Among my favorite pita sandwiches was always tuna or chicken salad because you could hold it and eat it without the chicken or tuna squeezing out. I did recently have a gyro at a local Greek joint that we stopped at for lunch while out shopping before Christmas.
