When I got up this morning I started the hambone simmering in 3 quarts of low sodium chicken broth, and cut up 2 medium onions, 4 ribs of celery along with the leaves attached, and diced about a pound and a half of left-over ham. When Kathy finished her breakfast she diced up 3 or 4 lbs of potatoes and added them to the broth. Later this afternoon she picked the ham off the bone and added the ham that I had diced earlier. When all was cooked and ready, she added a quart of half and half, a half stick of butter, and thickened it to the desired consistency with instant potato flakes. It turned out great. I love potato soup with ham in it. It is that time of year when a hot bowl of soup on a chilly day goes great.
Two bowls of soup and a tossed salad filled me to the brim. I just waddled in and flopped down and soon I will hit my recliner and take a speed nap until the 6:30 national news comes on.
