Oh my I made a Zucchini Frittata that would knock your socks off. Mine just flew off at first bite. I had that with my fresh green bean salad with oregano and garlic and olive oil and balsamic vinegar. Plus a small tomato and cucumber salad. I am so full. Managed to drink a nice glass of red wine( Pinot Noir) by Cavet. Oh the joy and happiness. I will give the other half of the frittata to this older lady I know who hangs out at Sangertown Mall. She owns a house on Elizabeth Street and at 84 still works part time as a library assistant at Proctor High School. Very nice Italian lady. I see her on one of my Buses and she always asks what I am cooking for supper tonight. LOL.

Sounds delicious PB. How do you keep a frittata fresh for the trip on the bus and for her to get it home to eat it. Do you have a little cooler bag? I only have a couple of more Zucchini left on the vine to pick. Just going to give them another couple of days to get to slicing size but still tender.
Next comes the harvesting the Butternut squash. 5 hills and I have about 20 or so squash that are ready for picking. The vines are dying off. I think they may have fallen victim to vine borers, but I am ready to call the garden quits anyway. It won't be long before it will be leaf time and I will be mulching leaves about every other day and dumping the mulch on the compost pile across the road.

I'm still picking tomatoes & cherry peppers. Best year for tomatoes in a long time. We had to give a few away we had so many. Don't know why, but I'm not complaining. Cool here today, temp right now is only 65* & feels good. Pruned the pear tree today & probably picked up & dumped 500 pears in the truck bed to bring to the transfer station.

I made a Pork Chop tonight with vinegar peppers and onions with some rosemary and garlic. It was so delicious. I enjoy making this when the weather cools off like in tonight during the autumnal approaching autumn. Oh gracious September you gives us blessings. Let us see them and be thankful.

Cool here today, temp right now is only 65* & feels good. Pruned the pear tree today & probably picked up & dumped 500 pears in the truck bed to bring to the transfer station. I think I mentioned my mom and dad's pain in the butt pear tree before. I used to pick them up before I mowed until I stung by bees that were on the windfalls on the ground. After that I just said the hell with it and mowed over them. They never picked the pears or spent time in the back yard when they got older. I wanted to cut it down but mom wouldn't hear of it. After my dad sold the house I noticed that one of the first things the new owners did was to cut down the damned pear tree. Now I am plagued with a walnut tree that has grown exponentially every year since we bought the house, and consequently produces more and more walnuts every year. The last couple of years I have had the lad next door pick them up. Last year he picked up 8 or 10 heaping wheel barrow loads and took them across the road and dumped them in a low spot in the weeds along the creek. I am sure that the squirrels thought that they had died and went to walnut heaven.

I don't know how Kathy cooks them but they are a favorite that I grew fond of after eating them at a local chop house. Could you give me a basic synopsis of how you prepare them? With the price of beef in recent months we have been eating a lot more pork.

It's too expensive & the last couple times we made it it was so tough a dog wouldn't eat it. So we do roast pork which is on sale at least once a week at one one of the big box stores.

We haven't bought any roast other than chuck for quite some time now. We love top round roast or tri-tip but the price of beef has gone bonkers.
We eat a lot more pork and love a good pork roast. We love both pork butt and pork shoulder, but the last couple of shoulders we bought were pretty tough. Once in a while I buy a 1/2 pork loin and slice it into thin breakfast chops, and thicker chops to pound out for snitzel. Kathy does occasionally use loin chops for smothered pork chops. She smothers them in cream of mushroom soup, sliced onions and additional mushrooms that have been cooked up in butter or bacon grease along with the chops. Sometimes she serves them over egg noodles along with the gravy they cooked in.
Sometimes the pork butt is done in the crock pot with BBQ sauce, orange juice, and brown sugar, and sometimes she does it in the crock pot with garlic, rosemary, 2 sliced onions and McCormick Grill Mates garlic and herb seasoning with a couple of cups of Swanson chicken broth.

PORK CHOPS WITH VINEGAR PEPPERS AND ONIONS Ingredients 4 4 Bone-In Pork Chops (medium thickness) 4 Cloves Garlic Enough Olive Oil to fry chops and peppers and onions 1 Jar Sweet or Hot Vinegar Peppers I use CENTO Sweet Cherry peppers in the glass jar. 1 medium Onion sliced 1 teaspoon rosemary fresh or dried 2 Tablespoons Red wine vinegar and pickling vinegar from the jar of peppers. 1/2 cup Chicken Broth Directions First smash the garlic and de-seed and slice the peppers, I like to leave them pretty big so I only slice them in half. Pat the pork chops dry and season with salt and pepper. Sauté garlic in olive oil and remove the garlic when it starts singing (set aside). By now your oil should be nice and hot so go ahead and brown the chops on both sides (about 3-4 minutes per side). Remove the chops. Set aside covered with foil to keep warm Saute the onions till lightly brown remove. Now saute the peppers I also add one green bell pepper that is sliced. Combine onions with peppers and add rosemary. Return pork chops to pan and add red wine vinegar plus 2 tablespoons of brine from vinegar pepper bottle. Add the Chicken broth. Cover and simmer till Pork Chops are cooked threw. Remove cover and reduce liquid to get a glase that coats the chops. You can also add baby potatoes that you slice in half. If I do that I add them along with the onions and fry together. This goes well with sautéed broccoli rabe or brussel sprouts or spinach. This is the basic recipe. I always use the thick pork loin chops without the bone but use whatever you wish.

Thanks PB. Sounds delicious. I wrote it all down on a recipe card for the next time I buy nice thick cut, bone in chops. I love spicy dishes but I will have to be happy with moderately spicy because Kathy is big fan of spicy foods. Are the peppers fairly moderate in heat when you take the seeds out?
