I roasted off some zucchini, yellow squash, onion, and plum tomatoes for supper. It was delicious
I sliced a small and tender zucchini, a tender yellow squash into about 1/4 inch slices, sliced a medium onion thin and separated it into rings. I put it all in a bowl, tossed it with olive oil and 1/4 cup of Olive Garden salad dressing, spread it on a baking sheet, sprinkled it with salt, pepper, garlic powder and Italian seasoning to taste, sliced 4 plum tomatoes and laid them around on the top, and roasted them off at 350 for about 45 to 60 minutes until they reached the desired tenderness.
I have a rack for the gas grill to roast vegetables on. I am going to try that the next time I cook on the grill.
They were delicious. An easy and cheap summer side dish. The squash was on sale at Aldi's in their ad. 2 small squash in a package for $1.19.
