I just put together a taco soup in the crock pot. A recipe from a friend. It makes enough to share or have left overs. Simple to make. Brown 1lb of ground beef with a diced large onion. Drain the grease and put the meat and onion into the crockpot. Then dump all the following ingredients in. 2 14oz cans of black beans, kidney beans, or white beans. Which ever variety you prefer. 2 14oz cans of Rotelle spicy tomatoes. (if you don't want it too spicy you can use just plain diced tomatoes) I 13oz can of whole kernel corn. 1 pint jar of salsa of your choice Cook for about 2 hours and serve with tortilla chips crumbled and shredded Mexican blend cheese on top if you wish. The added bonus is that you can use the leftovers the next day for nachos. Strain the soup to remove the liquid, heat and serve over chips with queso cheese poured on top and any other toppings you wish to add. I put sliced jalapenos on mine. The leftover is also good ladled over rice as an entree. I am going to experiment and try a little of it drained, chilled and put on top of greens for something similar to a taco salad. I will have to get back to ya on how THAT turns out. Soup tonight and nachos and the salad tomorrow.
