Grilled marinated vegetables, roasted red peppers Marinate ( EVO minced garlic, salt & pepper and a nice aged Balsamic vinegar ) the roasted peppers and mushrooms at least 24 hours. I season the zucchini & eggplant before grilling so they don't require sitting in marinade for a long period, the eggplant would also absorb to much of it, they are quite tasty right off the grill, I top it off with EVO & Balsamic before serving.
