We love soft tacos. I made tacos at home tonight. One pound of ground round seasoned with package of McCormick taco seasoning mix, fresh shredded lettuce, diced tomatoes, Sargento Mexican Blend shredded cheese, 10 inch flour tortillas, topped with El Paso medium taco sauce in a squeeze bottle. YUM!!
I use 10 inch tortillas so that I can put the ingredients in a line down the center of the tortilla and still have room to tuck the ends and roll them like a burrito so the fillings don't all fall out when you eat them. One might call them "Gringo" tacos but I love them because you can actually put enough meat in them to actually taste it, and room for plenty of shredded lettuce, tomatoes and cheese. No skimpy half filled restaurant tacos here.
We also treat ourselves to huge burritos, generously filled with refried beans, ground beef taco meat or chorizo, and lots of Mexican blend cheeses, and Kathy's favorite, over stuffed quesadilla's done on an electric griddle. Mexican cuisine is one of many things that are better cooked at home than in a restaurant, due to it's simplicity and availability of quality ingredients being readily available in neighborhood supermarkets. We also like cooking Chinese and Thai at home. We are fortunate to have a wonderful Asian and Oriental market near by.

No it is Tuesday I think. Now I'm confused. Moe's in North Utica is closed. Do not know why. I have never been there.

Oh dear I guess I got a bit ahead of myself and over anxious seeing those tortillas staring back at me when I opened the bread box and that big bag of Mexican cheese in the fridge. Shhh, don't tell Kathy. How tragic. We missed "meatloaf Monday." Oh my, hahaha. One of the hazards of being retired and not going anywhere for days at a time. I often have to look the top of my newspaper to see what day it is. They all pass and blurr together when we don't go anywhere or have any appointments for a few days.
