Grilled Kimcheese
This recipe is really wonderful as written, but I frequently go off script. I like to fry my grilled cheese sandwiches in butter rather than oil, because I prefer that flavor, but coconut oil would be really nice here, too.
If you don’t have any kimchi around, skip it, or use any sliced or diced pickled thing you have in the fridge. Asian pear really rounds out the flavors alongside the cheddar, but imagine slices of a firm peach or nectarine instead? *chef’s kiss*

Ingredients
2 slices multigrain bread
2-ounce block sharp cheddar cheese, grated (3/4 cup)
1/4 cup spicy kimchi, drained, squeezed to expel most of its liquid, then chopped
1/4 to 1/2 small Asian pear or Granny Smith apple, cored and thinly sliced
Sriracha hot chili sauce (optional)
1 teaspoon canola oil
Steps
1. Layer one slice of the bread with cheese, kimchi and fruit slices. (If you like a spicier sandwich, drizzle Sriracha sauce to taste.) Top with the other bread slice and press with your hand to flatten.
2. Brush a medium skillet with the oil and heat over medium-high heat. When the oil starts to shimmer, lay the sandwich in the skillet. Cook, pressing gently with a spatula from time to time, until the underside is golden brown, about 2 minutes. Repeat on the other side.
3. Transfer to a plate, and eat.
