I just broke a sweat showing the fellow that bought our trailer how to hook up weight distributing hitch, and to prepare it for the road. After a half hour wrestling with the trailer ( and that is why I sold it) I just took a shower and I am headed out to do my 45 or 50 minute stint on the NuStep exerciser at cardiac rehab. It is making a difference in my leg and arm strength that I lost over the winter and especially the sedentary lifestyle I was living after covid.
Going into the high 80's and low 90's later in the week so I better get my keester in gear and get the garden planted.

Very warm here today we hit 79 degrees without the humidity!!!!!!!! So much of nature is in bloom and rebirth it gives the soul some good replenishing it with the other. I bought some Mayo today to make chicken salad.

Got my container plantings in today which consisted of 2 tomato plants, 2 long hot peppers, 1 basil & 1 romaine lettuce. That's it. I'm looking forward to watering my garden with a 2 gallon watering can instead of hauling around 75 ft. of garden hose like I use to.
Our pear tree has probably 1000 blossoms on it, that's no exageration. They're dropping getting ready to set fruit. Must be making up for last year when we had less then a dozen pears.

I love chicken salad. Sam's Club sells it already made in their meat department, with diced celery, grapes, and walnuts. It is delicious.

We make it using mayo, celery, & red onion using leftover chicken. Using a store bought rotisserie chicken also works. We buy ours from Hannafords & they come hot off it usually by 10 a.m.

I seldom buy the rotisserie chickens any more. Food City and Krogers both still charge the same price as always but the chickens have gotten smaller. They aren't much more than an oversized cornish hen or poorly fed pigeon.
We seldom bought them anyway, but now if want one we simply put a chicken in our air fryer oven on the spit and cook it at home. I used to buy one occasionally and we would take it on a picnic along with a mac or potato salad. Ever since I was a kid I have always been a fan of cold chicken. A cold chicken leg makes a nice afternoon snack when I skip lunch, or it is good torn in pieces and added to my green salad .

Walmart has rotisserie chicken off the bone in plastic containers around where they have my other favorite, Hummus. That's another story. Anyways I also found a new Mayo which is made by Hellman's and has much reduced fat content. I do not use Mayo often so why I bought that I do not know. I think the bottle was screaming buy me buy me! I just use that along with celery and red onion and a pinch of garlic powder and onion powder. Then a few shakes of black pepper and then get ready for this; Old Bay seasoning. It's delicious. Why, well I accidently grabbed that one night when making my chicken breast fillets fried in butter and holly cow delicious. I only used Old Bay on my Friday baked Salmon along with dill and a pinch of onion and garlic powder and a few shakes of black pepper.. Oh my mouth is watering. Can't wait for Friday.

During winter months I always bring a cold chicken leg and a small cucumber with me when I am out an about. I have even included one or two radishes. Seems silly to come home for lunch I can just continue on and eat on the go. Sporty I think.... I also like Cornish hens. I like to make one dance in the sink when preparing one. Sprinkle it with Old Bay seasoning before baking. Get the one with reduced salt. Delicious

The Pastor of my parish church, St Johns, when I go and especially not during this pandemic lives at Our Lady of Lourdes with a few other priests. He is into container gardening. Last year he shared a photo of his garden he created at Lourdes. Fantastic. Plants were beautiful and large. Apparently they created an enclosed area in the back so as to also eat outside etc away from sight. Great job they did. I am glad clergy are getting together and living in a rectory that can hold several priests then going off to work in the morning wherever they are assigned. Better than living all alone in a dark dreary rectory with no one around. How Fr. Buelher did that for 25 years at St John's I have no idea.
