COPYCAT CHICK-FIL-A NUGGETS
INGREDIENTS:
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
1 cup dill pickle juice
1 1/2 cups milk, divided
1 cup peanut oil
1 large egg
1 1/4 cups all-purpose flour
1 tablespoon confectioners’ sugar
Kosher salt and freshly ground black pepper, to taste
FOR THE HONEY MUSTARD
1/4 cup mayonnaise
2 tablespoons honey
1 tablespoon mustard
2 teaspoons Dijon mustard
2 teaspoons freshly squeezed lemon juice
DIRECTIONS:
To make the honey mustard, whisk together mayonnaise, honey, mustards and lemon juice in a small bowl; set aside.
In a large bowl, combine chicken, pickle juice and 1/2 cup milk; marinate for at least 30 minutes. Drain well.
Heat peanut oil in a large skillet over medium high heat.
In a large bowl, whisk together remaining 1 cup milk and egg. Stir in chicken and gently toss to combine; drain excess milk mixture.
In a gallon size Ziploc bag or large bowl, combine chicken, flour and confectioners’ sugar; season with salt and pepper, to taste.
Working in batches, add chicken to the skillet and cook until evenly golden and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
Serve immediately with honey mustard.

Sounds like a lot of work to me when we have Chick Fil A about 10 minutes away, haha. Only kidding. We will probably try the recipe. We always have boneless chicken breasts on hand. I am not a big fan of nuggets but Kathy is. I like chicken breast tenders much better, but these sound good because they are chunks of breast meat and not chopped up chicken parts like McDonald's nuggets or Burger King's. Chick Fil A actually has a pretty decent selection of sandwiches and sides. I have occasionally went thru their drive-thru for coffee and a chicken biscuit at breakfast time when I have had an early appointment at the VA or something. Their chicken sandwiches are actually a step up from McDonald's or BK's. I know there was one in either N. Syracuse or Cicero. When I visited my youngest son at work at the ATT store in N Syracuse he had a bag on his desk from Chic Fil A. I remember asking him where the place was. I didn't know they had expanded into the NE. They are all over the place here, just like McDonald's. Usually on an out parcel of a shopping center or in a mall food court.

Nope, not in the Utica area yet. Closest one is in Cicero. The Syracuse area is a lot more financially active than Utica/Rome.

Nope, but we did have a Popeye's Fried Chicken, which, after a flying start, came to a sad, sad end a few years ago

was a chicken joint here on the damn bleecker st too the black guy came up from Brooklyn or the bronx i forgot which ghetto but closed down 6 months later. chicken joints attract trouble makers so good riddance.
The BIG MOVE now is for healthy eating which is fantastic. The guy who owns Ocean Blue overpriced eatery is opening a Burger Joint down in the lower wetlands of Utica ) Baggs Square. It will have a 1970s theme as in the Utica Observer . Only two things on menu Burger with french fries and a drink or hot dog french fries and a drink all with in the $10 to $12 or $15 dollar price range. He can keep it beef and hot dogs and fries are not healthy eating neiher is the soda, lol.
Baggs Square is the new hip hop entity of Utica along with Harbor Point the toilet of Utica. They gonna populate it then bring in eateries of various kinds all for the masses of people, lol.

We ordered from that Popey's once on a whim & never went back. Awful food. I'm not too sure if "chicken joints attract attract trouble makers", but I get the drift.

I heard Popeys on Genny closed because drugs were being sold from it. That was the same thing that happened to the McD's up on Genny Street near roundabout. I remember I went in their one day when I was doing a long walk and I ordered something and a small coffee. The coffee was ice cold and the egg Mc Muffin was cold also. I don't think they cooked it. I brought it back to the counter and the gal working it took it from me and said so what you want somethin else. I said just warm tht up or cook it and I'll take that. I went back to my table and drank my cold coffee waiting for the egg McMuffin. Never happened. LOL
