I was just looking in the freezer and came across about a pound of leftover ham that we had about a month ago. Next came the hard decision as to whether we wanted bean soup or scalloped potatoes. Bean soup won.
2 boxes of chicken stock 2 medium onions diced 1lb of dry great northern beans 2 cloves of garlic finely minced 1lb of good smoky ham finely diced 1 tbsp ground black pepper Cook until the beans are soft and well cooked Give the soup a quick whirl with a stick blender to break up some of the beans and help thicken it.
We are having it with crisp crackers and a green salad on the side, but I am sure a nice grilled cheese sandwich would go well with it.

My father was a Navy veteran. Bean soup was a staple in our household. When Barb buys a ham, the plan is always to use the bone for soup.

My father was a Navy veteran. Bean soup was a staple in our household. When Barb buys a ham, the plan is always to use the bone for soup. We actually haven't had a bone-in ham in awhile but we do the same thing. It has been a couple of months since we had a ham when we had friends over for a Sunday dinner. Shortly thereafter we had soup made with the bone. Ham doesn't freeze well but we vacuum seal just about everything we freeze. I froze the leftover slices of the ham to use later in scrambled eggs or to make scalloped potatoes. This particular ham was quite smoky so I hoped it would flavor the beans as well as the bone would. I was quite satisfied with the result. It was a spur of the moment thing. I happened to see the ham while getting veggies out of the freezer in the garage and thought we better use it up before it freezer burned or lost all it's favor. We love home made soups and stews anytime of the year and eat them often.
