Looks good, think I'll try it. But, I'm not too sure about mashing the potatoes. Think I'll leave them all diced & I'll substitute escarole as I'm not a big fan of kale.

Ran to Chanatry's this morning & picked up the ingredients for the Zuppa Toscana that we were short on. Glad I did. The soup was excellent. The only thing I changed was I used a head of escarole instead of kale & I added some ditalini pasta that i added at the end after cooking it seperately. With a side of garlic bread on the side, can't go wrong. We'll be having it again tomorrow & like most soup it's better the next day.

Tell us what you think after making this I am interested. I made a huge batch of Lentil Soup tonight. Delicious. I like to also add some cut up carrots and shredded spinach then serve it with pecarino-romano cheese and a couple table spoons of red wine vinegar. Damn it was good. Just wished I had a glass of red wine to go along with it.. May solve that problem tomorrow.

It's been soup weather lately. We madea pot of chili a few days ago. Had it for dinner that night. I had it for lunch the next day. We finished it last night. It is sunny today which makes it feel warmer even if the temp is the same.

Kathy made a huge pot of chicken noodle soup the other day. We ate it for supper that night, I had some for lunch the next day, and we finished it last night for supper.
We go bowling tomorrow night, and then to Perkins with friends so we will probably have a sandwich mid-afternoon to hold us over. I always look forward to my Honey Mustard Chicken crunch salad. Why am I not surprised to see that the salad got smaller and the price went up a buck and a half, haha.
We have the ingredients to make the sausage and potato soup so she will probably make it to have over the weekend. I can't find any escarole so it will be made with nice tender baby spinach. I bought a wedge of good parmesan cheese so we would have it to grate the 1/2 cup for the soup. All we had left is some of the fake stuff in a bottle with the green cover that we keep around for meatballs and meatloaf.

Ribs for us tonight. Hopefully, leftovers for lunch tomorrow, No rain predicted today so maybe Mikey can mow the backyard after school.
