Cracker Barrel meatloaf. It's what is for supper tonight. There are very few places that I would order meatloaf, but on one occasion recently I ordered it at Cracker Barrel and was delicious. Cracker Barrel is not a place we go often. They specialize in "homestyle comfort foods" and here in the Southeast, there are a plethora of great restaurants serving country fare. Kathy made it once with plain bread crumbs and it was not the same. Another favorite of mine at Cracker-Barrel is their hashbrown casserole. It is good at breakfast and also good as a side to any meal. Tonight it will accompany the meat loaf, roasted Brussels sprouts and a green salad. It is only 10:15 am and I am already looking forward to supper. www.cdkitchen.com/recipes/recs/512/Cracker_Barrel_Hash_Brown_Casserole34910.shtml

Recheck the link PB. I had put the wrong link up. She makes the 2lb recipe and we have leftovers for hot meatloaf sandwiches or a cold sandwich with Hellman's mayo and salt and pepper. I suppose for one person you can halve the recipe and make a one pound version and it would come out ok.
She has also froze half and later she put it in the oven at 350 to rewarm with a fresh batch of the sauce over it to keep it from drying out.

I make a meatloaf very similiar to CB's. The only diference is the Ritz crackers & the cheese. I bookmarked this one, I'll have to try it, sounds good.

Kathy made it once with panko bread crumbs but it wasn't as good as it is with buttery flavor imparted by the ritz crackers. It is darned good either way. She used to just put ketchup on top of her meatloaf but the brown sugar and mustard make it very tasty.
