Hey I got an email from Maryanne Esposito and it included this tomato salad. Made it tonight and it is excellent. I used Goat cheese crumbles instead of Blue Cheese. Summer Cherry Tomato Salad Serves 4 2 cups cut in half cherry tomatoes 1 cucumber, sliced Salt and pepper to taste 1 teaspoon sugar 2 tablespoons extra virgin olive oil 1 generous tablespoon white balsamic vinegar ½ cup chopped fresh basil ½ cup crumbled blue cheese Combine tomatoes, cucumber, salt, pepper, sugar in a salad bowl. Mix oil and vinegar together and pour over salad; toss well. Add basil and cheese; toss again. I use the Wild Wonders Gourmet medially from Walmart. They are very tasty and taste like a fresh grown tomato.They are like grape tomatoes but come in different varieties all mixed together. I like the different colors of tomatoes in a salad. Red, yellow and purple. Enjoy

That sounds good PB. I have had something similar at a Greek place here made with Feta cheese. It is served with a simple vinaigrette. It sounds like it might be much better with the sugar added and the basil on top. Walmart has a feta that comes in a 1 lb tub while most other places I have seen it, it was in 2 lb tubs. I can use enough of it to justify having the 1 lb, but would not be able to use 2 lbs of it in a reasonable period of time. Kathy doesn't care for feta and isn't a big salad eater. I do a small salad almost every night with my supper, and quite often a nice large salad is all I eat for lunch along with a few saltine crackers. I should explore other recipes for feta. Yep, my favorite store to hate. The Feta cheese is one of those things that I find myself making the infrequent trips to Walmart for. In through the auto center door, straight across the store to the cheeses, grab my feta make a beeline back to the auto center to ring out my little package of cheese and get the hell out of there. LOL I seldom buy anything there that I can't check out through the auto center or garden store register.

You Walmart must be very busy. North Utica from the 1st of the month to the 7th of the month that place is usually packed.( Welfare, Snap, SSI,SSDI and WIC time) After than and on some days it is dead. Last month around the 18th of the month I was in there and 10 registers had a cashier. Big problem there was only about 5 people in the store. One gal even said to me where is everybody. HaHa

Haha. Just the opposite here. Usually the store is packed and there is only a couple of registers open. Our store is just up the road from the speedway and it is race week here. To go to Walmart today would be insanity. I went to Food city yesterday and the aisles were plugged with pallets of beer, soda, chips, charcoal and other stuff that caters to race fans that are camping nearby. You could just barely get by the displays that have been set up in the aisles. The local ice company as well as the local beer distributor actually park trucks and trailers loaded with their product behind the store to keep up with the demand and they leave them there until the day after the race. I will be staying on this side of town until Sunday afternoon or Monday when the rat race is over and that side of town has seen the last of the campers headed out of town.
