Fresh Margarita Chicken Description Fresh Margarita Chicken is quick and easy. Delicious all year round! Ingredients Serves 4 zest of 1 lime + juice of 4 limes zest of 1 orange + juice of 2 oranges 1/4 cup tequila (optional) 2 Tablespoons extra virgin olive oil 1 Tablespoon + 1 teaspoon agave nectar (could use honey) 3 crushed garlic cloves salt and pepper (lots) 4 small chicken breasts Directions 1. Combine ingredients from lime zest to salt and pepper in a large bowl or ziplock bag then mix well. Add chicken breasts then cover and marinate in the refrigerator for 1-4 hours. 2. When ready to grill or cook, let chicken breasts rest out of the fridge for 10-15 minutes then grill or saute over medium-high heat for 4-5 minutes a side, or until cooked through. Sounds good if you like the flavor of tequila with the alcohol cooked off. I am not fond of the taste of tequila. The breasts should be vert tender and sweet with the juices, the agave nectar and the zests. Seems like a lot of ingredients to marinated 4 small chicken breasts though considering the fact that the marinade would have to be thrown away after soaking raw chicken in it wouldn't it? For those that like that sort of marinade and flavor I am sure that it would be delicious.
I don't have a sophisticated taste I guess. I have never been a fan of cooking with wine or other spirits other than steaming brats or hot dogs in beer.
