I don't think I would eat anything made with carp unless they were farm raised. Most of our streams today are contaminated to one extent or another and bottom feeders are not on my menu. There are some huge catfish here and I have eaten some of the meat from them, but they are channel cats and were caught in the deepest part of a local lake. I used to see two old black gentlemen from Washington Courts fishing for carp where Reels Creek empties into the canal. I saw them a couple of times walking home along Whitesboro Street with two or three large carp on a stringer.
My grandfather used to prepare pickerel or Northern pike patties using those same ingredients. He would grind the fish because they were so boney. I was never crazy about them and wouldn't eat them.
