I later found out that that is essentially what shiokara is. To call it "salted squid" is a misnomer. It's fermented. Rotten. To prepare shiokara, you take a squid, slice up the raw meat into small chunks, and then mix it with a paste made from the squid's fermented viscera – or, guts. That's the dish: raw squid mixed with fermented guts.
