Does anyone Grill their veggies? Could you also instruct me on how to grill veggies?

I grill veggies all the time. They are great. I slice zucchini and summer squash length wise, vidalia onions about 1/2 inch thick, pepper rings, and tomatoes. I season them with whatever spices and herbs strike my fancy at the time. Everything from cumin to seasoned salt, or just plain salt and pepper. I sometimes marinate them in italian dressing ,and sometimes I simply brush them with good quality olive oil, and grill them until they have grill marks and are cooked but still crisp. If you do tomatoes, cut them thick enough that they don't fall apart or fall through the grill. They will lose a lot of the seeds and juice as they cook. They are good by themselves on a plate as a side dish, and are excellent in added to a salad. Especially a pasta salad.

Enjoy!!! With the "diet" I have been pursuing (actually simply watching what I eat and how much) I eat a lot of veggies. The other day we did stuff on the grill. I cut some eggplant in slices about a half inch thick, dusted them with garlic salt and let them sit in a colander and bleed out some of the water, and then grilled them, brushing them with olive oil. I put them on a burger bun with a slice of onion, a slice of fresh tomato, and brushed the bun with barbecue sauce lightly. It was very satisfying and filling, and very low in fat and calories.
I am by no means a vegetarian, but I like to experiment with stuff like grilled veggies. Just something different from the usual burgers and dogs.
I doubt that God will ever create a veggie that replaces a good thick, rare steak on the grill though, LOL.
