We had some Italian sausage and wanted a light supper. Couldn't make up our mind if we wanted sausage sandwiches or cheese quesadillas. We had tortillas and a bag of shredded Mexican blended cheese. I told Kathy that we could have a simple quesadilla and a salad. I had been working outside in the sun all day and was not really feeling like I wanted a heavy meal. We are both great fans of cheese quesadillas She likes hers with the typical Mexican blend cheese, and I like mine made with the pepper jack or with a few slices of pickled jalapeno sprinkled on top of the cheese before putting the top tortilla. We settled on a combo. She took the sausage out of the casing and fried it up loose. We sprinkled the sausage meat lightly on the bottom tortilla, laid some strips of roasted peppers on it, put enough cheese on top of it to bind it together when the cheese melted, topped it with a second tortilla and grilled them on our electric griddle until the cheese was all melty and gooey and the tortillas were just starting to get hot and beginning to brown slightly. Grabbed a pizza cutter, placed the 10 inch quesadilla on a dinner plate and cut it into wedges like a pizza. It was delicious when accompanied by a nice crisp tossed green salad. I wonder if Italian families in Mexican cities have ever tried combining the two cuisines. It has awakened my experimental side. . My next experiment might be steak fajitas served over linguini or fettucini.
