Thousand Island dressing is one of my favorites, and I like to make my own because it's quick and simple and doesn't have any 'chemistry set' additives. Here's how I make it, although you can adjust the sugar and relish to your preference of sweetness... and of course the recipe can be doubled:
1/2 cup - mayonnaise (I use Hellmann's) 1 Tbsp - ketchup 1 Tbsp - vinegar 1 tsp - sugar 1 tsp - sweet pickle relish 1 tsp - onion, minced 1/8 tsp - salt dash - pepper
Put all in a bowl and whisk to combine. Refrigerate for several hours, stirring occasionally to give the sugar time to dissolve. I store mine in a glass bottle from a store-bought dressing that's been used up. Keep refrigerated.
