Egg Omelette Pierogies stuffed with soy bacon, sauerkraut and browned onion and cheese topped with a yogurt dill sauce. My new invention. I do not eat flour or bread so I am re- inventing a few things.

I used the morning star bacon; meatless. Fried according to directions.
3 eggs: 1 whole eggs and 2 egg whites salt. pepper. 1 TBS 1/2 and 1/2, 1 teaspoon green onion
Filling fried one small onion with 1/2 cup sauerkraut and 1 tsp dill
Make an omelet as usual when top is almost set place filling on one side add slice of American cheese. Fold other side on top and place on dish.
I topped it with a mixture of plain greek yogurt and dill. Made about 2 tsp.

I would have used whole eggs only and 1/4 cup cream in the egg mixture but I eat a lot more fat than you do. Our omelettes tend to look a little strange in the pan since I like more stuff in mine than Barb does. Both halves had meat and mushrooms this morning. Mine included olives, tomatoes and peppers. Everything covered with cheese, cover, then divide down the middle when the cheese melts. She gets a piece of toast with hers. However I will have a salad for lunch.

I liked it.
We had a lazy start to today. Barb sang at Saturday evening mass so she slept in today. After our mid-morning breakfast we went for a walk around the neighborhood. Barb can walk much faster and longer than I on a treadmill but complained that this made her hips hurt. I pointed out that we were going downhill and that since we were on the left side of the road also had a right to left cross slope. Neither condition ever happens or a treadmill and we were forcing our muscles and joints to adapt to unfamiliar stresses.
I then reminded her that it would be much tougher on wet cobblestones going uphill into a headwind. That didn't seem to make her much happier. I am probably a pain to live with but at least I provide a good breakfast.
