Today is a perfect day to make a dish for those nippy, nasty, winter days when you just want to stay inside and keep warm. I make it often. It's called "Beans-N-Rice" although there's some ground beef in it as well. It has lots of protein and a little bit of carbohydrate and a whole lot of flavor and is real easy to make.
Beans-N-Rice Kit Temple (makes 5 hearty cups)
1/2 lb ground beef 2/3 cup onions, chopped 2/3 cup green pepper, chopped 2/3 cup crushed tomatoes (from a 28oz can [freeze the rest]) 3/4 tsp chili powder 3/4 tsp cumin 1/2 tsp granulated garlic (or garlic powder) 1/2 tsp salt 1/4 tsp pepper 1 (15oz) can cannellini or red kidney beans (with juice) 1 cup chicken stock 1/2 cup white rice 1 cup water (a smidge of hot sauce is suggested, but optional)
In a large pot, cook the ground beef, breaking into chunks. Remove and drain. Cook onion and pepper until onion softens. Return beef to pot. Add remaining ingredients, bring to a boil and stir, reduce heat and simmer for 25-30 minutes, stirring occasionally, until rice is done. (The rice will absorb most of the liquid) Thin with water if preferred. Serve with saltines and grated cheese. Leftovers can be frozen.

Thanks Kit I will make that. I have to use brown rice or quinoa cause I do not eat anything white.

Alan, with brown rice you'll need to simmer it longer for the rice to absorb the liquid. I imagine the nuttier flavor of the brown rice will add to the dish and it'll definitely make it more nutritious. Enjoy.
