Loaded Sweet Potato Prep Time: 10 minutes Cook Time: 50 minutes Total Time: 1 hour Serving Size: 1 Ingredients 1 medium-sized sweet potato 2 cups spinach 3 slices of bacon 1/2 cup cheddar cheese, shredded salt/pepper Instructions Preheat oven to 450 F. Prepare baking pan with foil. Wash sweet potato and poke with fork. Place on baking sheet and bake 25 - 40 minutes. It depends how big is your sweet potato. Just check with fork if it's soft and baked through. Cut bacon into small pieces, place on the pan. Cook them for awhile. Remove excess oil from the bacon. Add spinach, season with salt and pepper. Cook for 2 - 3 minutes. Cut sweet potato in half, add spinach with bacon and shredded cheese. Bake for another 10 minutes. Serve immediately.

This sounds delicious Alan. I may try it some day soon. I love sweet potatoes and we have baked sweet potatoes (yams) quite often as a change of pace from the normal starchy white potato or rice dish.

That sounds good also Alan. Hmmm. I wonder how it would be for breakfast with a poached egg added to the mix. We see the white sweet potatoes here in the markets too. I don't remember ever seeing anything but yams when we lived up North. The white sweet potatoes are not as sweet as the yams but are quite good simply mashed with a pat of butter melted over the top.
