15 Minute Healthy Roasted Chicken and Veggies (One Pan) Ingredients 2 medium chicken breasts, chopped 1 cup bell pepper, chopped (any colors you like) ½ onion, chopped 1 zucchini, chopped 1 cup broccoli florets ½ cup tomatoes, chopped or plum/grape 2 tablespoons olive oil ½ teaspoon salt ½ teaspoon black pepper 1 teaspoon italian seasoning ¼ teaspoon paprika (optional) Instructions Preheat oven to 500 degree F. Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes. Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, italian seasoning, and paprika. Toss to combine. Bake for 15 minutes or until the veggies are charred and chicken is cooked. I shall have to try this recipe Alan. I love roasted or grilled vegetables and make them often. They are so much more flavorful than steamed or blanched veggies. I also like veggies done in a saute pan with olive oil and seasonings. I have a taste that leans toward very savory and mildly spicy. I am not into simple and bland foods. I don't think I could cook without a rack stocked with plenty of spices and herbs.

I added some Brussel Sprouts and a little cauliflower. Damn it was very good.

I guess they don't grow garlic in this part of the country. I used to buy a garlic braid every fall and it would last for several months. I have a hard time here in Tennessee trying to find garlic that is not grown in China, much less grown locally and hung in a braid. The fact that we no longer can count on finding a label stating the origin of a food makes me a bit tentative when shopping for many food products. I really am not fond of the idea of buying produce items that may have been fertilized with human waste or grown in countries that have very little regulation when it comes to purity of food stuffs. I don't use as much garlic as I used to. I used to add garlic to everything but my oatmeal, hahaha.

DO they have the chopped garlic that comes in glass jars. It is very easy to grow. My old landlord just used to put them in before winter and the following early summer he had garlic.

Yes, we do have jarred garlic, packed in either water or oil. I just prefer the fresh bulbs of garlic to be minced as I need it. I think it just tastes fresher, and I also like to roast garlic to use in mashed potatoes. You can't roast the garlic in a jar. I shall have to look into growing garlic. We don't do a garden any more but we do grow peppers and tomatoes in containers outside the back door in summer.Why not add a small amount of garlic to the mix of homegrowns.
