We alter the recipe somewhat and use Uncle Ben's white rice rather than the long grain and wild rice, and we use thighs rather than breasts or tenders, or chicken breasts with the bone in and skin on. Remember. DON'T PEEK! It comes out moist, and flavorful with the chicken remaining absolutely melt in your mouth tender and juicy.
