Ok so in a few weeks it will be my daughter's 2nd birthday I would like to make a different kind of cake. I was wondering if anyone had any good recipes. This will also be great, because at my job I will be making a birthday cake for a few co-workers next month.

Dark Chocolate Cake:
2 cups sugar 1 cup cocoa (Hershey's) 2 sticks (1 cup) REAL BUTTER 2 tsp. baking soda 2 cups hot water 2 eggs 2 tsp. vanilla 2 cups flour
Mix them all together, put into to 2 round pans (so you can make a 2 layer cake) and bake at 350 for around 45 minutes or so depending on the oven. I'd start checking after a half hour...it's done if a toothpick comes out clean.
Let cool, frost one cake with cream frosting, put the other layer on top, frost the other layer with cream frosting, then do the sides, and enjoy!
It's incredibly good cake...it's been passed around my family for years. This might be the first time any non-family member has gotten it soooo...welcome to my family all my new cousins! ;-)

Strawberry Cake
1 Dunkin Hines White cake mix that calls for oil and eggs 2 lbs. frozen strawberries 1 large tub or whipped topping or you can make whipped cream
Strain strawberries, reserving the juice. Make cake as box directs but use juice in place of water. You can add water to make up difference if you don't have enough juice. Bake cake in a 9 x 13 pan. Cool. Mix berries into the whipped topping or cream. Spread on cake. Keep refrigerated. Yummy!

Really good, not too sweet frosting:
1 cup milk 3 heaping tablespoons flour
Cook until thick and smooth, stirring constantly. Set aside to cool.
1 cup butter or margarine, softened 1 cup sugar
Beat 4 minutes or until fluffy.
Add cooled mixture to beaten mixture. Mix well.
Would be great on Kim's chocolate cake!

OHOHOH! I have some fresh strawberries for you...we went strawberry picking last weekend and we have the most wonderful, sweetest strawberries you'll ever try! Wow, they're good!

lucy, yes you can! I actually mix the fruit with the whipped cream and then decorate the top with fresh strawberries that I have cut in half.

Haha! Berry picking in July?? We are picking corn and tomatoes by then down here in the south. We went to a strawberry festival yesterday in Unicoi Tn. I cheated on the old diet and had cup of homemade vanilla ice cream with fresh berries on top. Reminded me of the ice cream and berries we used to get at the festivities in Millers Mills. Berries have been on the stands for a week or so now. They will be gone shortly.

This is my favorite cake during summer months: Creamsicle cake:
Ingredients: 1 (18 ounce) package yellow cake mix 3 eggs 1 cup orange juice 1/4 cup oil 2 (3 ounce) packages orange flavored gelatin, divided 3/4 cup boiling water 1 cup cold water 1 (3 ounce) package instant vanilla pudding (no cook type) 1 cup whole milk 1 tsp. vanilla 1 cup heavy whipping cream 3 Tbsp. powdered sugar Preparation: Preheat oven to 350 degrees F. Prepare cake mix as directed on package, using eggs, orange juice, and oil. Spray 13x9" pan with baking spray and add cake batter. Bake at 350 degrees F for 30-40 minutes until cake springs back when touched and starts to pull away from sides of pan. Cool cake completely on wire rack.
Using a wooden chopstick, poke small holes all over the cake, going right to bottom of pan.
In a small bowl, place 1 box orange gelatin. Pour boiling water over gelatin and stir until gelatin is completely dissolved. Add 1 cup cold water and mix well. Slowly pour this mixture over the cake, making sure that the mixture gets into all the holes. Cover and chill for 2-4 hours.
In medium bowl, combine 1 box orange gelatin, the pudding mix, milk, and vanilla and beat well. In small bowl, combine heavy cream and the powdered sugar and beat until stiff peaks form. Fold the cream mixture into the gelatin mixture and spread over cake. Cover and refrigerate for 4-8 hours before serving.
