Renit? Lipase? Haven't seen that at Kroger's lately. Sounds like the cheese would be costing $10 a pound by the time I got all the ingredients together. I am back to looking for the ricotta recipe and hoping it is less labor intensive than the mozzarella, haha.

Sounds like a great way to pep up an English muffin for a late evening snack. Tuck one of those in your tummy with a cold glass of skim milk and sleep like a baby.
