Frank's 2-Alarm Chili

I'm thrilled you liked the chili, Clipper. I never tried it with real peppers. Now I'm going to have to go shopping this afternoon.

Real Ancho chilis are not real hot. They have a nice fruity flavor to them. Before you throw them in the chili, soak them in a little hot water to reconsitute them. ( I buy them dried), and taste them for heat. If they are too hot, scrape the seeds out, and use them according to your taste. If you like hot sauce, Texas Pete is also a good thing. It has a little flavor all it's own. Not like some of the others like Frank's Louisiana, or Tobasco sauce. It is a little milder and not quite so dominated by vinegar. I loved the recipe, and we are going to have some more today for lunch. I imagine it will be even better after steeping in the refrigerator over night. Some things get better after they sit overnight and all the flavors infuse with each other. Mmmmmm! I had to come back and modify my post. That chili deserves 5 smilies!
