I have been wondering what to cook for St Patty's Day. I was thinking a nice Irish Stew using lamb and Guinness stout with the carrots and a few potatoes. Not sure. Might just be easier to go to the Irish Pub on Varick Street I heard there food is to die for. Well not literally, but still. Has anyone made city chicken. I have yet to make and try it. Its mostly from Clippers part of the area. Its not chicken FYI 😊

We have had it a couple of times. We used the recipe I will link, and made it in the air fryer. Kathy skipped the browning in a pan and spritzed the skewers with olive oil and cooked them until brown in the air fryer. Misting them with olive oil and cooking them at about 400 degrees in the air fryer actually made them brown and crispy, similar to frying in a pan or deep fryer. A friend who also made it in the air fryer sent us the recipe. We tried a lot of things when we first got the air fryer. Some were awesome, and some were a disaster and messy to clean up after. This was one of the recipes that left the screen racks hard to clean. They were okay, but not a quick and easy supper to fix and a bit messy with the dishes necessary for the breading process. We use a package mix when we have hot corn bread with bbq. The brand is Krusteaz Honey Cornbread. We add tiny pieces of jalapeno pepper to the mix. Not health food, but, delicious!

I have done my own dressing for decades. Symeon's seasoning mixed with olive oil and red wine vinegar. No ingredients with strange chemical names. you need to shake the bottle before pouring.

We don't have Symeon's seasoning here but I occasionally make my own red wine vinegar and olive oil dressing with the crushed garlic that you can buy in the produce section in a jar, italian seasoning, and good quality EVO. I have started buying my olive oil at a store in Johnson City that specializes solely in upscale quality olive oils and balsamic vinegars. The difference between the good olive oil and the stuff that is sold in supermarkets is amazing. The say that most of the cheaper olive oils are cut with vegetable oil. We use the cheap stuff for cooking and save the good stuff for salad dressing or drizzling on finished dishes.

We generally rely on Michael for oil, he gets us the kind they supply to restaurants. It comes in a box like cheap wine. Ideal packaging for oil, protected from light and air the 2 oil killers. The next time you are in Utica pick up a packaging of seasoning, they have it packaged for sale. Best not to get stopped by police with a baggie of dried plant material on the dash.
