Kathy makes stuffed shells , lasagna, and stuffed manicotti with ricotta and uses it in her cheesecakes. I have never eaten it with fruit but I bet it is good. I have used it on a bagel instead of cream cheese

I put it in some omelets I make; well fritatta's. I also like it as a side dish along with scrambled eggs. 1/2 cup can't kill a person. I have always had it in stuffed shells, lasagna and manicotti. The Easter cheesecake is made with ricotta. I love that and it has become very expensive buying it at one of the Italian pastry places.
