Christmas Eve snow alert: Up to 6 inches to hit Central New York Updated 4:29 PM; Posted 10:39 AM Syracuse, N.Y. -- Up to six inches of lake effect snow is expected to fall in Central New York starting this afternoon and continuing into Christmas morning. The National Weather Service said it expects the snow to start about 1 p.m. today and continue until 7 a.m. Tuesday, making travel difficult. Snow showers and squalls this afternoon will transition to lake effect snow bands this evening, the service said. The snow will fall in Onondaga, Madison, Cortland and southern Cayuga counties. Hopefully it will stay to the South and West as it often does and you will be able walk safely to mass and enjoy the service. Your comments about Ralph's Caprese salad sent me hunting for the recipe. It sounds like it would be very tasty if I could find the ingredients here. I might have to have the soppressata sent to me from Utica. Is Soppressata shelf stable and preserved like some salamis so it could be shipped without refrigeration or would I have to order it mail order from somewhere that would pack it in dry ice? I have never paid much attention to whether the mozzarella we have bought in the past was cows milk or buffalo mozzarella. I wonder what the difference would be or if it would be noticeable. It may be a recipe that I will have to wait until we are in NY for vacation next year.

Soppressata can be shipped without problem since it is like salami. Buffalo mozzarella has a slight tart taste if I remember correctly.
It is nice that we have a fresh blanket of snow covering the ground this morn. Makes everything so clean and fresh looking.

I will definitely have to look into getting some soppressata. Kathy and I occasionally slice tomatoes and mozzarella and drizzle them with some olive oil and balsamic. It makes a nice light lunch in summer when the tomatoes are in season. I have never had it with the herbs added. I noticed in one recipe I looked at they just drizzled it with good olive oil and no vinegar. I just went searching for soppressata on the web and found that they carry a couple of brands of it at my favorite store to hate, Walmart. That makes things a lot easier. What do you suggest for herbs? Just a few fresh basil leaves? Have you ever eaten raw fresh oregano leaves? Are fresh oregano leaves a bit too strong to eat raw in a salad? The recipe I looked at said either oregano or basil or a combination of both. I am glad to find that I can get it here. The last soppressata I had was from Roma on Bleeker St. I simply sliced that and ate it on crackers and put a little of it in a tossed green salad with some imported greek olives from the deli.

Clipper the soppressata from Walmart is made by Danieles here on Mohawk and James St. It is excellent. I am not sure if it is the same at the Walmart down there.
I only use fresh basil and olive oil on my Caprese salad. I slice the tomatoes then alter sliced tomatoes, sliced fresh mozzarella, basil tucked in between then to form a circle. Then I drizzle olive oil on top and let marinade for 30 minutes at room temp.
I never had it with fresh oregano.
I like the Walmart soppressata very much. Leave it out to get to room temperature if you had it in refrig. before using.
Now I am hungry
